“ Hi Kathi --
Just starting to learn more about Local Foods myself, but basically it's trying to focus on preparing and eating foods that are grown locally, so that foods can mature longer on the plant, becoming more healthful & flavorful. There's an emphasis on heirloom varieties (more flavorful), and eating things in their season. There's an organization called Slow Food, which kinda leads the effort. I am currently reading Animal, Vegitable, Miracle which expands on appreciating local foods. ”
